They are made with juicy hot dog sausages, melted cheddar cheese, and caramelized spicy kimchi. Topped with green onions, sesame seeds and a drizzle of spicy mayonnaise, these Korean hot dogs are seriously next level! 

This recipe is quick, easy, and completely customizable. If you’re a fan of spicy foods or just want a twist on one of your favorite foods, these kimchi hot dogs will have you begging for seconds!

  • Hot dog sausages – Any type of sausage works, but classic beef or pork hot dogs are best. I also like to use German bratwursts for extra meaty flavor. 
  • Hot dog buns – A regular hot dog bun works fine, but brioche buns will make this recipe even better! 
  • Kimchi – Use well-aged spicy kimchi for the best flavor. Drain and chop it into small pieces before cooking. Use store bought (I recommend Jongga kimchi) or make your own Authentic Homemade Kimchi. 
  • Cheese – No hot dog is complete without melty cheese! Use cheddar cheese or American cheese for the best results. 
  • Green onions – Optional, but highly recommended as a topping

Optional 

  • Kimchi Coleslaw - Adds crunchiness and extra flavor to your hot dogs. I recommend using my Easy Kimchi Coleslaw recipe. 
  • Kimchi Mayo – Store-bought or use my Easy Kimchi Mayo recipe to make your own.
  • Mustard or ketchup – Classic choices for extra tangy and sweet flavor.

How to make this recipe

  1. In a heated skillet over medium heat, add the chopped kimchi and cook for 3-4 minutes until caramelized. This step enhances the flavor and removes excess moisture.
  2. In the same skillet, add a little vegetable oil and cook the hot dog sausages over medium-high heat for 4-5 minutes, turning occasionally until lightly browned.
  3. Turn off the heat, then place 1-2 slices of cheddar cheese over each hot dog. Cover the skillet with a lid and let the cheese melt.
  4. Place the cooked hot dog inside a toasted bun, then top with the caramelized kimchi mixture and optional Kimchi Coleslaw. Sprinkle with green onions, sesame seeds, and red chili flakes if desired.
  5. Drizzle with Kimchi Mayo, mustard or ketchup and enjoy you kimchi dogs hot!

  • Crispy fried onions: Adds crunch to the creamy cheese and caramelized kimchi.
  • Gochugaru (Korean red chili flakes): For those who love extra spice, sprinkle some on top for added heat.
  • Gochujang sauce: Perfect to add extra flavor and spiciness. 
  • Pickled radishes: Bring a tangy crunch that complements the richness of the hot dog. I recommend using Korean pickled radish. 
  • Kimchi Coleslaw: Goes perfectly with this recipe and adds crunchiness and extra creaminess.
  • Kimchi mayo: Make your own kimchi mayo and use for extra flavor. 
  • Sesame seeds: Sprinkle roasted sesame seeds on top for extra nuttiness.
  • Seaweed flakes (gim): Add a lot of umami taste and works like a charm with the kimchi flavor. 
  • Egg: Top the hot dog with a fried egg for a heartier meal.
  • Mustard: A must for that classic hot dog kick! Use store-bought or make your own whole grain mustard.

Expert Tips & Tricks

  • Caramelize the kimchi – This step intensifies the flavor and prevents the bun from getting soggy.
  • Toast the buns – Lightly grilling or toasting the hot dog buns keeps them sturdy and adds a nice crisp texture.
  • Texture - Adding coleslaw into the Kimchi Hotdogs adds a lot of texture and crunchiness! I recommend using my Kimchi Coleslaw recipe. 
  • Use aged kimchi – Older, fermented kimchi has a stronger, tangier taste that works best in this recipe.
  • Adjust spice level – If you prefer milder flavors, reduce the amount of kimchi or mix it with a little sugar. You can also skip the chili flakes.

How should I store leftover kimchi hot dogs?

I recommend assembling the hot dogs as you eat them to prevent them from getting soggy. If needed, you can store the cooked ingredients separately. The kimchi mixture can be stored in an airtight container for up to three days. Keep the buns at room temperature to prevent them from becoming too hard in the fridge.

Can I make kimchi hot dogs in advance?

You can prepare the kimchi mixture ahead of time and store it in the fridge for up to three days. The hot dog sausages can also be pre-cooked and reheated when ready to assemble. However, for the best texture, it’s recommended to toast the buns and melt the cheese just before serving.

How do I reheat kimchi dogs?

Kimchi: Reheat in a small pan over medium heat for a couple of minutes until warm. Alternatively, cook from scratch. 
Hot dog sausages: Reheat in a skillet with a little oil over medium heat, in the oven at 350°F (175°C) for 5-7 minutes, or in the microwave for 30 seconds to 1 minute.

Ingredients
  

  • 2 hot dog buns
  • ¼ cup kimchi drained and chopped
  • 2 hot dogs
  • 2 slices cheddar cheese
  • 2 green onions chopped
  • Sesame seeds optional

Instructions
 

  • In a heated skillet over medium heat, add the chopped kimchi. Cook until caramelized, stirring continuously for 3-4 minutes.
  • In the same skillet, add a little oil and cook the hot dogs until slightly browned, for 4-5 minutes.
  • Turn off the heat, then place 1-2 slices of cheddar cheese over each hot dog. Cover with a lid and let the cheese melt.
  • Place the cooked hot dog inside the bun, then top with the caramelized kimchi. Sprinkle with green onion and sesame seeds.
  • Serve with mustard and kimchi mayo or ketchup.
