- Blueberries – Use ripe, juicy blueberries for the best taste. You can also use frozen, just reduce the quantity of water as they release much more juice.

How to make this recipe

- Wash and halve the cup of blueberries, then place them into a medium saucepan with sugar and water.
- Cook over medium-high heat until boiling, then reduce to low heat and mash the blueberries with a spoon. Simmer for 8-10 minutes.
- Remove from heat and strain through a fine mesh sieve or fine mesh strainer. Don’t discard the fruit, it’s great for yogurt toppings!
- Return the syrup to a small saucepan and simmer on low heat for another 5 minutes until slightly thickened.
- Let cool to room temperature, then pour syrup into a mason jar or airtight container for storage.
Success Tips & Tricks
- Don’t simmer for too long – Blueberries contain pectin, and overcooking can turn the syrup into jelly. If it does thicken too much after cooling, return it to heat and add more water to dilute it.
- A squeeze of lemon – Lemon works perfectly with blueberries and balances out the sweetness. Add a squeeze of lemon at the end to make the syrup tangier.
- Adjust consistency – For drinks you want a more liquid syrup, so reduce the simmering time. For pouring over desserts and pancakes you want the blueberry simple syrup to be thicker, so simmer a bit longer.
- Freeze for later – Store in ice cube trays for easy portioning.

Yes! Reduce the water slightly since frozen berries release more liquid.
You can replace sugar with a sweetener like stevia, but it will be slightly more liquid in consistency.
