Nothing says summer more than fresh berries bursting with natural sweetness. I love making homemade syrups because I can enjoy the flavors of summer for much longer.

This blueberry simple syrup is the perfect way to add a sweet blueberry flavor to any of your favorite drinks, ice cream and even French toast! Made with fresh blueberries, this syrup tastes fruity, sweet and a little tangy.

This easy recipe is made with just three simple ingredients and can takes under half an hour to prepare. It’s super versatile and can be customized to suit your taste.

Homemade blueberry syrup is a great way to sweeten drinks like a blueberry matcha latte, drizzle over desserts, or mix into your favorite cocktails.

  • Blueberries – Use ripe, juicy blueberries for the best taste. You can also use frozen, just reduce the quantity of water as they release much more juice.
  • Sugar – Use plain white granulated sugar.
  • Water – I recommend using filtered water if possible.
  • Lemon – Optional, but helps balance out the sweetness.

How to make this recipe

  1. Wash and halve the cup of blueberries, then place them into a medium saucepan with sugar and water.
  2. Cook over medium-high heat until boiling, then reduce to low heat and mash the blueberries with a spoon. Simmer for 8-10 minutes.
  3. Remove from heat and strain through a fine mesh sieve or fine mesh strainer. Don’t discard the fruit, it’s great for yogurt toppings!
  4. Return the syrup to a small saucepan and simmer on low heat for another 5 minutes until slightly thickened.
  5. Let cool to room temperature, then pour syrup into a mason jar or airtight container for storage.

Success Tips & Tricks

  • Don’t simmer for too long – Blueberries contain pectin, and overcooking can turn the syrup into jelly. If it does thicken too much after cooling, return it to heat and add more water to dilute it.
  • A squeeze of lemon – Lemon works perfectly with blueberries and balances out the sweetness. Add a squeeze of lemon at the end to make the syrup tangier.
  • Adjust consistency – For drinks you want a more liquid syrup, so reduce the simmering time. For pouring over desserts and pancakes you want the blueberry simple syrup to be thicker, so simmer a bit longer.
  • Freeze for later – Store in ice cube trays for easy portioning.

Frequently asked questions

How long does blueberry simple syrup last?

Store in a mason jar or airtight container in the fridge for up to 2 weeks. As a rule of thumb, if the syrup looks clear, with no fogginess or mold forming on the surface, it should be safe to use.

Can I use frozen blueberries?

Yes! Reduce the water slightly since frozen berries release more liquid.

Can I make it sugar-free?

You can replace sugar with a sweetener like stevia, but it will be slightly more liquid in consistency.

Ingredients
  

  • 2 cups blueberries halved (330 grams)
  • ⅔ cup granulated sugar 140 grams
  • ⅓ cup water 70 grams

Instructions
 

  • Wash and halve the blueberries. Place them into a medium saucepan with sugar and water.
  • Cook over medium-high heat until the mixture starts boiling, then reduce heat to low and mash the blueberries with a spoon or fork. Simmer on low heat for 8-10 minutes.
  • Remove from heat, then use a sieve to remove the fruit flesh. Don’t throw away the fruit, they are a great yogurt topping!
  • Return the syrup to the saucepan and simmer over low heat for another 5 minutes or until thickened.
  • Cool down completely, then store in an airtight glass or bottle.

Notes

Blueberries – you can also use frozen fruit for this recipe. If using frozen, cooking time will be slightly longer and you can halve the water quantity.
