If you’re looking to level up your French fries game, then these kimchi fries are just what you need! Made with crispy fries topped with caramelized onion, kimchi, cheddar cheese, and smoky bacon, they’re the ultimate comfort food! Although not authentic, they’re a playful Korean-American fusion perfect for kimchi lovers.

Perfect as a side or a tasty dish to share, this kimchi fries recipe is packed with the perfect balance of flavor, spice, and a hint of sweetness. I love having them on their own or with Kimchi Mayo!

These kimchi loaded fries are super simple to make and taste like they came straight from a Korean restaurant or food market. Oh, and the best part? You can whip up this recipe in under 30 minutes!

Ingredient round-up

ingredients in various plates and bowls on white background
  • Frozen Fries: Use thick-cut fries for the best results. Cook them according to the package directions or prepare them fresh if you prefer.
  • Gochugaru Flakes & Garlic Powder: The gochugaru adds a smoky heat, and the garlic powder boosts the flavor. You can sprinkle these seasonings over the fries after they’re cooked.
  • Onion - White onion works, but I recommend yellow onions as they’re a bit sweeter once caramelised.
  • Bacon Rashers - Smoked bacon adds a delicious savory flavor to the fries. You can also use lardons.
  • Kimchi - Use authentic napa cabbage kimchi for its authentic taste. I recommend using homemade cabbage kimchi, but store-bought works as well. Use a reputable brand like Jongga kimchi.
  • Cheese - Shredded cheddar cheese melts perfectly over the fries. You can use any melty cheese you like for that gooey, cheesy finish.
  • Garnishes – You can add any types of garnishes you like, but I recommend toasted sesame seeds, green onions and fresh cilantro.

Variations & Substitutions

  • Meat – you can use ground beef or Bulgogi beef instead of bacon. Spam is also a great option! For a lighter version, you can use lean meat like Grilled Turkey Breast.
  • Spicy kick – Up the spiciness in this dish by adding fresh chilli, gochujang mayonnaise, kimchi mayo, or spicy cheese sauce.
  • Vegan – Use vegan kimchi and replace the bacon with mushrooms for a plant-based alternative.
  • Seafood twist – Stir-fry some calamari or shrimp in a little soy sauce and garlic, then add over the loaded fries.

How to make Loaded Kimchi Fries

Step-by-step process of making kimchi fries
  1. Cook the french fries according to the package directions in a single layer in a baking dish. You can bake them on a baking sheet in a preheated oven or use an air fryer.
  2. Heat up a large skillet over medium heat and cook the bacon until browned. Add the sliced onion and kimchi to the skillet cooking until caramelized.
  3. Top the cooked fries with the kimchi mixture, ensuring it’s evenly distributed.
  4. Sprinkle with the shredded cheddar cheese. Return the fries to the oven until the cheese has melted.

Pro Tips & Tricks

  • Crispy Fries - For the best crispy fries, cook them in a single layer on a baking sheet, ensuring they don’t overlap. Toss halfway through for even cooking.
  • Drain the Kimchi - If your kimchi is too wet, drain it slightly to avoid soggy fries. You can store any leftover kimchi in an airtight container in the fridge for future use.
  • A Hint of Sesame - Drizzle a little sesame oil over the fries before serving for a deeper nutty flavor.
  • Garnish – For an even better flavor, make sure you use lots of fresh garnishes and sauces like Kimchi Mayo or Sriracha Mayo. You can also use Gochujang sauce for a spicier kick!
