Cheesy Kimchi Fries Loaded with Bacon (김치프라이즈)
Ingredients
- 14 ounces frozen fries thick cut (400 grams)
- 1 teaspoon gochugaru flakes
- 1 teaspoon garlic powder
- 1 medium onion
- 3-4 bacon rashers smoked
- 1 cup kimchi
- ½ cup cheddar cheese shredded
Garnish, optional
- Kimchi sauce or Kimchi Mayo
- Toasted sesame seeds
- Scallions
- Fresh chilli
- Cilantro
Instructions
- Cook the fries as indicated on the packaging, or prepare from fresh. Once cooked, add to a baking dish and sprinkle some gochugaru flakes on top, tossing to coat.
- Whilst the fries are cooking, cut the bacon and kimchi into small strips.
- Heat up a medium skillet, then add the bacon and cook for 1-2 minutes until browned.
- Add the onion and kimchi, and sautee for another 3-4 minutes. If desired, add some gochujang paste for extra spiciness.
- Top the cooked fries with the caramelised kimchi, then sprinkle shredded cheddar on top.
- Return the dish to the oven for 2-3 minutes or until the cheese has melted.
- Garnish with extra kimchi, scallions, toasted sesame seeds and kimchi mayo.
