Crispy, spicy, and cheesy kimchi fries loaded with caramelized kimchi, bacon, and melted cheese. A delicious Korean-inspired twist on classic loaded fries!
Cook the fries as indicated on the packaging, or prepare from fresh. Once cooked, add to a baking dish and sprinkle some gochugaru flakes on top, tossing to coat.
Whilst the fries are cooking, cut the bacon and kimchi into small strips.
Heat up a medium skillet, then add the bacon and cook for 1-2 minutes until browned.
Add the onion and kimchi, and sautee for another 3-4 minutes. If desired, add some gochujang paste for extra spiciness.
Top the cooked fries with the caramelised kimchi, then sprinkle shredded cheddar on top.
Return the dish to the oven for 2-3 minutes or until the cheese has melted.
Garnish with extra kimchi, scallions, toasted sesame seeds and kimchi mayo.
