- Lavender – Use dried lavender buds or fresh lavender blossoms from a lavender plant. Make sure it’s culinary lavender, suitable for consumption.
- Sugar – I recommend using plain white sugar, but you can use organic cane sugar or coconut sugar for variation. I do not recommend using brown sugar, as it give the syrup a brownish color.
- Water – Use filtered water if possible.
- Purple color (optional) – Add butterfly pea flowers for a natural tint or a small amount of food coloring for a deeper hue.
How to make this recipe

- In a medium saucepan, add 1 cup sugar, 1 cup water, and 2 tablespoons dried lavender.
- Cook over medium heat until boiling, then reduce to low heat and simmer for 15-20 minutes. Do not stir.
- Strain through a fine mesh strainer to remove the lavender.
- For color, add 1 drop of food dye or steep butterfly pea flowers with the lavender, then add a touch of fresh lemon juice for a purple color.
- Cool to room temperature, then transfer into a glass bottle or mason jar. Store in an airtight container in the fridge for up to 2 weeks.

- Add sugar first, then water – This helps the sugar dissolve evenly. Do not mix it at all.
- Do not stir – Stirring can encourage crystallization. Make sure no sugar crystals touch the side of the pot.
- Ensure all sugar is dissolved – Any sugar crystals remained undissolved can encourage crystallization of the syrup. So make sure everything is properly dissolved.
What to Do If It Crystallizes
If your homemade lavender simple syrup crystallizes, gently reheat it over medium heat, adding a small amount of water to thin it out. Avoid boiling, as this can thicken it too much.

Easy Homemade Lavender Simple Syrup for Drinks
Ingredients
- 1 cup granulated sugar
- 1 cup water
- 2 tablespoons dried lavender culinary grade

- purple food coloring
Instructions
- In a medium saucepan, add sugar, water and dried lavender.
- Cook over medium heat until boiling, without mixing. Reduce heat to low and simmer for 15-20 minutes.
- Carefully, use a fine sieve to carefully sift out the lavender.
- Optional: add 1 drop of purple food coloring for a more intense color. For a natural color, add a few butterfly pea flowers at the same time as the lavender, then add 1-2 teaspoons of lemon after straining the flowers out.
- Cool down completely, then transfer into a clean and dry airtight jar or bottle. Store in the fridge for up to 2 weeks.

- Quantity: this recipe makes around 1 cup of syrup or 6 servings.
- Storage: use a clean airtight bottle or mason jar to store the syrup. Keep in the fridge for up to 2 weeks. If it crystallises, this is completely normal and can happen. Just cook again over medium heat until fully dissolved.
