Wash and halve the blueberries. Place them into a medium saucepan with sugar and water.
Cook over medium-high heat until the mixture starts boiling, then reduce heat to low and mash the blueberries with a spoon or fork. Simmer on low heat for 8-10 minutes.
Remove from heat, then use a sieve to remove the fruit flesh. Don’t throw away the fruit, they are a great yogurt topping!
Return the syrup to the saucepan and simmer over low heat for another 5 minutes or until thickened.
Cool down completely, then store in an airtight glass or bottle.
Notes
Blueberries – you can also use frozen fruit for this recipe.
