Juicy and spicy Korean-inspired Kimchi Burger made entirely from scratch! This next level burger has a homemade beef and kimchi patty, tangy kimchi, creamy spicy mayo and a soft brioche bun. Super easy to make at home!
Start by preparing the burger patties. Drain ⅓ cup of kimchi and squeeze out all the juice, then chop it finely. Keep the kimchi juice for later.
In a medium bowl, add the ground beef, egg, chopped kimchi, breadcrumbs and spices. Mix well until combined, then cover and set aside in the fridge for 20-30 minutes.
Divide the beef mixture equally and form each part into a disc shaped patty.
Heat a skillet or pan over medium heat, with a drizzle of vegetable oil or butter. Pan fry the patties for 5-6 minutes on each side for medium done or 8-9 minutes for well done. Once almost cooked, add the cheese on top of each patty.
Whilst the burgers are cooking, prepare the kimchi mayo. In a small bowl, add the mayonnaise, kimchi juice and optional gochujang paste. Mix well and set aside.
Toast the brioche burger buns with some butter, then spread some kimchi mayo on each side of the brioche.
Add a few lettuce leaves on the bottom half of the bun, then add the burger patty.
Top with kimchi and green onions.
Optionally, fry two eggs and add on top.
Serve immediately.
Notes
Storing: You can make the patties ahead of time and keep them in the fridge for up to 1-2 days or freeze them for up to 1-2 months. Thaw well before cooking.
