Firstly, prepare the tapioca pearls by following the instructions on the packaging. Cook until they become soft and chewy, then drain and set aside.
In a small saucepan, prepare brown sugar syrup or add store-bought syrup. Heat up the syrup until bubbling.
Place Assam tea leaves in a teapot or a heat-resistant jug. Pour hot water over the leaves and let them steep for about 3-5 minutes, depending on how strong you like your tea. After steeping, strain the tea to remove the leaves and let it cool down to room temperature.
